Balsamic Glazed Salmon with Strawberry Salsa

Ingredients
- 16 oz Atlantic salmon, skin-on
- 8 T balsamic vinegar
- 8 oz strawberry salsa
- 16 oz zucchini
Salsa
- 3 oz strawberries
- ¾ oz red onion, diced
- ¾ oz jalapeno, diced
- 2 ½ tsp lime juice
- 2 ½ tsp honey
- Fresh cilantro
Directions
- Cut salmon into 4 oz portions.
- Add balsamic vinegar to salmon and marinate for 6 hours.
- Make strawberry salsa and set aside. Chill.
- Cut zucchini in half-moons.
- Lay salmon in a sheet pan and season with salt.
- Cook salmon and zucchini in a preheated 375°F oven until internal temperature reaches 135°F or until tender.

Strawberry Salsa
1. Clean and wash strawberries.
2. Dice strawberries.
3. Chop cilantro, red onion and jalapenos.
4. Add honey and lime juice.
5. Mix all ingredients in a bowl.
