Superfood of the Month: Strawberries

Strawberries are naturally sweet, refreshing and packed with nutrients that support heart health, immune function and overall wellness. Adding strawberries to a meal or snack is an easy way to boost nutrition without much effort.

Balsamic Glazed Salmon with Strawberry Salsa 

Balsamic glazed salmon with strawberry salsa
Ingredients 

  • 16 oz Atlantic salmon, skin-on 
  • 8 T balsamic vinegar 
  • 8 oz strawberry salsa 
  • 16 oz zucchini 

Salsa 

  • 3 oz strawberries 
  • ¾ oz red onion, diced 
  • ¾ oz jalapeno, diced 
  • 2 ½ tsp lime juice 
  • 2 ½ tsp honey 
  • Fresh cilantro 

Directions 

  1. Cut salmon into 4 oz portions. 
  2. Add balsamic vinegar to salmon and marinate for 6 hours. 
  3. Make strawberry salsa and set aside. Chill. 
  4. Cut zucchini in half-moons. 
  5. Lay salmon in a sheet pan and season with salt. 
  6. Cook salmon and zucchini in a preheated 375°F oven until internal temperature reaches 135°F or until tender. 
  7. Assemble 

Strawberry Salsa 

1. Clean and wash strawberries. 

2. Dice strawberries. 

3. Chop cilantro, red onion and jalapenos. 

4. Add honey and lime juice. 

5. Mix all ingredients in a bowl.

Serves four
Nutrition per serving – calories: 230, fat: 5g, cholesterol: 95mg, sodium: 70mg, carbohydrate: 16g, protein: 30g
