Superfood of the Month: Apples

Crisp, refreshing and available year-round, apples have earned their place as one of nature’s most nutritious snacks. Whether you enjoy them fresh, sliced with peanut butter or baked into a favorite recipe, apples provide a powerful combination of fiber, vitamins and antioxidants. Fun fact: There are more than 7,500 varieties of apples grown around the world. 

Health Benefits

  • Excellent source of fiber, which supports digestive health and helps you feel full longer 
  • Rich in antioxidants that help protect cells from everyday damage 
  • Contain vitamin C to support a healthy immune system 
  • May help support heart health by promoting healthy cholesterol levels 
  • Naturally low in calories while providing lasting energy 
  • Contain plant compounds that help fight inflammation 
  • Support healthy blood sugar when eaten as a whole fruit 
  • Easy to take on the go, making healthy snacking convenient 
  • Hydrating thanks to their high-water content

Fall Apple Salad with Grilled Turkey

Ingredients 

  • 4 4 oz turkey burger patties, seasoned 
  • 1/8 oz spring mix 
  • 2 gala apples 
  • 2 oz walnut halves, unsalted, raw 
  • 4 T blue cheese, crumbled 
  • 1 oz Granny Smith apple chips 
  • 1 c balsamic vinaigrette dressing 

Directions 

  1. Cook turkey patties on a flame broil grill until internal temperature reaches 165°F. 
  2. Slice apples. 
  3. Assemble by adding spring mix to a bowl. Top with sliced applies, walnuts, apple chips and blue cheese. 
  4. Add sliced cooked turkey patty and dressing to finish.

Serves 4.
Nutrition per serving – calories: 270, fat: 38g, cholesterol: 5mg, sodium: 980mg, carbohydrate: 17g, protein: 4g
