Apple- and Brie-Stuffed Chicken Breast with Sweet Potatoes

Ingredients
- 24 oz chicken breasts
- 1 oz apples, sliced
- 2 oz Brie
- ¼ tsp dried thyme
- 4 tsp maple syrup
- 20 oz sweet potatoes, diced to 1-in
- 4 tsp canola oil
- Paprika, to taste
- Cinnamon, to taste
Directions
1. Preheat oven to 400°F.
2. Toss diced sweet potatoes with 1 tsp of canola oil, salt, pepper and optional spices.
3. Roast in preheated oven for 20 to 25 minutes, until tender and lightly caramelized.
4. Reduce oven temperature to 375°F.
5. Butterfly the chicken breast by slicing horizontally without cutting through the chicken. Season inside with salt, pepper and thyme.
6. Layer apple slices and Brie inside, fold close and secure with toothpicks, if needed.
7. Heat 1 tsp of oil in an oven-safe skillet over medium heat.
8. Sear the chicken for 2 to 3 minutes per side until golden.
9. Transfer the skillet to the oven and bake 15 to 18 minutes, until chicken reaches 165°F internally.
10. Remove toothpicks, drizzle chicken with maple syrup and serve with roasted sweet potatoes.
