Grilled Peach and Chicken Salad

Ingredients
- Spring mix
- 16 oz fresh peaches
- Red onion, sliced
- 4 avocados, sliced
- 2 oz crouton
- 1/8 oz feta crumbles
- 4 6 oz chicken breasts, boneless, skinless
- 1 c peach vinaigrette dressing
Vinaigrette Dressing
- 6 oz peaches, sliced
- ¼ c olive oil
- 3 T rice wine vinegar
- 1 tsp Dijon mustard
- 1 tsp honey
- Fresh cilantro
Directions
- Season chicken breast with salt and pepper. Grill on flame broiler until internal temperature reaches 165˚F. Set aside.
- In a bowl, add spring mix, red onion, croutons and vinaigrette. Toss together.
- Top with avocado, feta, peaches and grilled chicken.
Vinaigrette Dressing
- Place all ingredients in a food processor.
- Blend until mixture is smooth and creamy.
- Dip a salad leaf in the vinaigrette to taste, adding more vinegar for tartness or more honey for sweetness.
